Salon is one of Champagne’s rarest and most singular prestige cuvées, produced only in selected vintages from Chardonnay grown in the Grand Cru village of Le Mesnil-sur-Oger. The 2015 combines the generosity of a warm, dry vintage with the chalky precision and mineral tension for which Salon is renowned, yielding a wine of unusual accessibility without sacrificing its formidable aging potential.
Blend: 100% Chardonnay from Le Mesnil-sur-Oger.
Tasting Notes: White flowers, citrus, ripe apple and stone fruit emerge alongside brioche, hazelnut and subtle beeswax. The palate is concentrated yet remarkably polished, with a creamy, finely textured mousse balanced by chalky minerality, saline freshness and bright acidity, leading to a long, precise finish.
Structure: Concentrated, refined and mineral-driven, with fine mousse, vibrant acidity and exceptional persistence.
Drink Window: 2027–2060. The wine is already expressive, but its depth, acidity and proven resistance to oxidation strongly favor extended cellaring.
Decanting: No traditional decanting is necessary. Serve around 50–54°F in a generous Champagne or white Burgundy glass and allow the wine to develop slowly in the glass. For a bottle opened very young, 15–30 minutes of air after pouring can reveal substantially more aromatic detail.
The 2015 Salon is a true collector’s Champagne: rare, intellectually compelling and capable of decades of evolution. Whether opened alongside caviar, lobster, turbot or simply served as the centerpiece of an important celebration, it has the stature to define the occasion while remaining remarkably graceful at the table.
