Les Folatières is one of Puligny-Montrachet’s best-known Premier Cru climats, situated high on the slope above the village and prized for Chardonnay that can combine concentration with the appellation’s characteristic mineral precision. Domaine Michel Caillot’s 2015 now brings meaningful bottle age to the naturally generous vintage, placing the wine at an appealing intersection of mature texture and remaining freshness.
Blend: 100% Chardonnay.
Tasting Notes: Ripe pear and baked apple are joined by acacia, hazelnut and subtle toast, with chalky, savory notes becoming more apparent as the wine opens. The palate is broad and silky without feeling heavy, its mature orchard fruit carried by a firm mineral line toward a persistent finish with gentle nutty complexity.
Structure: Medium to full-bodied, with the breadth of the 2015 vintage balanced by Puligny’s underlying acidity and mineral definition. Bottle age has rounded the wine’s texture and integrated its élevage, while enough freshness remains to give the palate shape and persistence.
Drink Window: Now–2030. The 2015 is firmly in its drinking window and should be approached for the combination of remaining fruit and emerging mature complexity. Properly stored bottles may hold longer, but at this stage provenance and storage conditions matter more than theoretical longevity.
Decanting: No extended decanting is necessary. Serve around 50–54°F in a Burgundy glass and allow the wine to develop gradually; if initially reserved or reductive, a brief splash decant is preferable to prolonged aeration.
For drinkers drawn to mature white Burgundy, the 2015 Les Folatières offers both the specificity of a highly regarded Puligny Premier Cru and enough bottle age to show development beyond primary fruit. It is especially well suited to turbot, sole, lobster, roast poultry or veal, where its combination of texture, freshness and savory complexity can take a central role at the table.
