From one of Chassagne-Montrachet’s established Premier Cru sites, Paul Pillot’s Les Champs Gain reflects the domaine’s precise, mineral-driven approach to white Burgundy. By 2016, Thierry Pillot had firmly established the estate’s reputation for wines that emphasize clarity, restrained richness, and energetic acidity over excess weight.
Blend: 100% Chardonnay.
Tasting Notes: Aromas of lemon curd, yellow apple, white flowers, toasted hazelnut, and subtle flinty reduction unfold with air. The palate is layered yet controlled, with ripe orchard fruit, citrus oil, chalky minerality, and a gentle creaminess balanced by fresh acidity. With bottle age, more mature notes of beeswax, almond, and savory mineral tones should emerge around a long, finely textured finish.
