93 Points – James Suckling
Bruno Paillard is an independent Champagne house founded in Reims in 1981, recognized for a precise, restrained style built around freshness, extended aging and carefully selected reserve wines. Dosage Zéro takes that philosophy to its purest expression: a bone-dry Champagne with no added dosage, emphasizing fruit clarity, texture and mineral definition.
Blend: 50% Pinot Noir, 50% Chardonnay, incorporating a significant proportion of reserve wine.
Tasting Notes: Bright and finely etched, with green pear, preserved lemon and citrus zest layered with white flowers, toasted bread, fresh walnut and subtle savory notes. The palate is taut and energetic, with a fine mousse, brisk acidity and a saline mineral quality that carries through the focused, refreshing finish.
Structure: Dry, linear and precise, with firm acidity, fine bubbles and excellent mineral tension.
Drink Window: Drink now through 2032 for maximum freshness and definition, with enough depth to develop additional savory complexity over several years.
Decanting: No decanting required. Serve around 46–50°F in a generous Champagne or white-wine glass and allow a few minutes after pouring for the wine’s toasted, nutty and citrus nuances to emerge.
Bruno Paillard Dosage Zéro is particularly compelling for Champagne drinkers who favor purity and tension over sweetness or overt richness. Its incisive freshness makes it a natural partner for oysters, shellfish, sashimi and delicate seafood, while its polished texture and distinctive zero-dosage character give it the presence for celebratory drinking or thoughtful cellaring.
