Julien Brousseau is a project from Thomas Ventoura, whose family has grown vines around Fontenay, just north of Chablis, for three generations. The 2025 is a classically styled village Chablis, emphasizing Chardonnay’s freshness and clarity, with lees aging in stainless steel providing subtle texture without obscuring the wine’s mineral profile.
Blend: 100% Chardonnay.
Tasting Notes: Lemon and crisp green apple lead into pear and delicate white flowers, with subtle saline and stony notes adding dimension. The palate is bright and focused, with fresh citrus, restrained orchard fruit and a clean mineral character carrying through the finish.
Structure: Light to medium-bodied, with lively acidity providing tension and definition. Fine-lees aging adds a touch of texture through the mid-palate while the absence of overt oak keeps the wine precise and refreshing.
Drink Window: 2026–2030. Best enjoyed while its citrus fruit, freshness and mineral character remain at the forefront, though a few years in bottle should bring additional savory nuance.
Decanting: No decanting is necessary. Serve around 48–52°F and allow a few minutes in the glass for the wine’s fruit and mineral character to open.
This is an appealing introduction to Chablis for those who value freshness and mineral definition over richness or oak. Its crisp profile makes it particularly versatile with oysters, shellfish, grilled fish, sushi, goat cheese or simply as a refreshing aperitif.
